Cinnamon Apple pie


250g of all purpose flour
100g of buckwheat flour
3/4 mug of cane sugar
1/2 teaspoon of baking soda
60g of coconut oil
pinch of salt
water (according to need)

4 peeled apples
1-2 spoons of cane sugar
1 spoon of lemon juice


Slice peeled apples into little cubes, toss with cinnamon, cane sugar and add lemon juice. Set aside. Prepare crust by whisking both flours, baking soda, cane sugar and salt in a large bowl. Put the coconut oil in the microwave for about 30 seconds and then add melted oil into bowl with dry ingredients and mix. Add water according to need until the loose dough forms. Gently mold the dough together with hands on a floured surface. Divide in two, making one slightly bigger (for the bottom crust). Grease pie pan with coconut oil and make the bottom crust. Add the apple filling. Form the other crust into strips and do a lattice top. Bake for about 40-50 minutes at 180 degrees.
